Airport bars are relying on style to wring extra dollars out of wealthy travelers. “While many customers are comfortable in traditional bar settings, other travelers are coming to expect more sophisticated drinking and dining venues,” says Paul McGinn, who heads MarketPlace Development, a Boston-based airport retail developer. Airports are now attracting restaurant and bar operators who are adept at designing spaces that are trendy lounges rather than folksy watering holes.
